The Check Out section provides an option to specify whether you want the rooms to be marked as "Dirty" upon check out.
Path: Housekeeping > Setup > Time Allotment
1. Check the "Set Room Dirty on Check Out" box to activate the feature.
2. Click the green floopy disk to Save.
